Just curious how would a spacer lift while offroading play a part in breaking your cv joints?

A spacer lift will be adequate if you don't do much offroading. I don't see how a spacer lift would affect the CV's, any more than a susupension lift would.
I have the OME 3" lift with a LOT of trimming to fit 37's. When I first bought it, I fit 285/70/17's (33/11/17) with no lift and no trimming while using the stock aluminum rims. You will easily be able to fit 33/12.50/17's with a 3" lift as long as you use rims with the right offset/backspacing. 35's will fit, but most likely a body mount trim will be needed. It's easy to do.

Yes, it changed color...don't ask.
Then, with the same OME 3" lift, 37's and LOTS of trimming.

The problem is over extension of the CVs By adding 3/4 in of spacer to the top of a strut you cause the CV to extend down 1.5 in more putting it in the danger zone for angles. The most you can put above a strut is 5mm which is 3/8 in translated to 3/4 at the wheel which is what any after market struts extend to a extra 3/4 in of down travel and most will give you about 1/2 in of up travel which you'll never see unless you jump your truck. And adding springs to your factory struts will cause them to top out to quick because the rebound damping is not enough."

I wasn't picturing the spacer on TOP of the strut, only the one IN the strut.
