When I get my FJ I am intending on buying it with steelies. I would like to put some aftermarket awesome rims on it but don't know the sizes. I'm not a guru on cars, so I was wondering what sizes would fit on an FJ without any modifications.

Secondly, I would like to lift the FJ, I don't think doing a ridiculous lift would look good on an FJ, so I was wondering where that limit is, from looking good to looking like it's on stilts. I think the limit is around 5" maybe even 3". I haven't come across any lifted FJs so I can't really speak from personal observation.

And then what sizes for rims and such you would suggest.

I don't really understand the x/y/z set up of the tire sizes.

I'm trying to get rid of my newbie status by figuring this stuff out.

I can explain to you the x/y/z part about tires - that's about all I can help you with.
FJ stock wheel set-up = 265/70/17
x = tire width in metric system (i.e. stock tire width is 265 milimeters)
y = the sidewall height as a % of tire width (i.e. stock tire sidewall height - edge of tire to edge of rim- is 70 = 70% of the 265 mm)
z = rim diameter (i.e. stock FJ rim is 17 inches)
Tire dimensions sometimes also come in inches. example 33" tires (= tire diameter) x 10.5 " wide x 15" (rim diamteter).

It makes sense, thanks a lot!

And as far as lifts go, I did some research, and saw some 7" lifts, it doesn't look as ridiculous as it does on a wrangler, still a lot more than my limit would be though. I would probably cap at 5".

Almost all lifts for the FJC are 3" or 6". I'd have to say you'd be pretty happy with the 3" lift. If you trim your body mounts with the 3" lift, you can fit a tire that is 35" in diameter. Like a 35/12.50/17, or 35/12.50/18, or metric sizes like 315/70/17 or 315/65/18, etc...
Keep in mind that rim offset and backspacing will also come into play.
